FARM-TO-CUP
IT'S NOT JUST OUR ATTITUDE THAT MAKES US A LITTLE DIFFERENT THAN THE MAJORITY OF MICRO ROASTERS ON THE MARKET. AT RIP OUR BEANS COME DIRECTLY FROM A "SINGLE FARM", ANOTHER STEP ABOVE AND BEYOND THE TYPICAL "SINGLE ORIGIN" OFFERINGS THAT DOMINATE THE MARKET. THIS IS WHY RIP CAN TRULY STATE THE DISTINCTION OF "FARM-TO-CUP" COFFEE.
THE FARM
WE WORK WITH A SINGLE COFFEE ESTATE LOCATED IN THE PACIFIC MOUNTAIN REGION OF NICARAGUA, CENTRAL AMERICA.
ESTABLISHED IN 1885, THIS STRICTLY HIGH ELEVATION COFFEE ESTATE SITS AT THE TOP OF AN ACTIVE VOLCANO AMONGST THICK JUNGLE TERRAIN COVERING JUST OVER 4600 ACRES OF PRISTINE NATURAL HABITAT. THE FARM IS CONSIDERED ONE OF THE LAST LARGE NON-INDUSTRIAL COFFEE FARMS IN ALL OF THE AMERICAS. AS A CERTIFIED HERITAGE ESTATE FARM, THIS PROTECTED AREA NOT ONLY PRODUCES SOME OF THE FINEST COFFEE, BUT IS ALSO A CERTIFIED EXOTIC BIRD SANCTUARY. TWO BIRD SPECIES THOUGHT TO BE EXTINCT HAVE BEEN IDENTIFIED BY THE SITHSONIAN INSTITUTE AS HABITATING THIS PROTECTED AREA. THE FARM HAS ALSO BEEN AWARDED THE MODEL FARM OF NICARAGUA.
THE COFFEE IS USDA CERTIFIED ORGANIC AND ALL BEANS ARE HAND PICKED AT THE PEAK OF RIPENESS, HARVESTED ACCORDING TO THE OLD TRADITIONAL METHODS. BECAUSE ONLY THE RIPE BEANS ARE PICKED, SOME AREAS WILL BE PICKED OVER UPTO 10 TIMES IN A SEASON TO ENSURE ONLY RIPE BEANS ARE SELECTED FOR FINAL PROCESSING.
BY COMPARISON INDUSTRIAL FARMS WOULD START WITH CLEAR CUTTING SENSITIVE HABITAT AND PLANTING LARGE ROWS OF COFFEE PLANTS IN FULL SUN WITH NO RETAINED HABITAT TO SUSTAIN DISPLACED WILDLIFE AND VEGETATIVE DIVERSITY IS ESSENTIALLY ELIMINATED, TO ALLOW THEIR CROPS TO BE MACHINE HARVESTED. MACHINE HARVESTING NOT ONLY REDUCES THE QUALITY OF THE HARVESTED COFFEE, IT SIGNIFICANTLY REDUCES THE NUMBER OF JOBS AVAILABLE FOR LOCAL WORKERS. INDUSTRIAL FARMS WASH PROCESS THEIR MACHINE HARVESTED CROPS. THIS MEANS THAT RIPE, UNDER-RIPE AND GREEN BEANS ARE INCLUDED IN THE WASH PROCESS. THIS NOT ONLY DRAMATICALLY IMPACTS THE FLAVOR POTENTIAL OF TEH HARVEST, THIS WASH PROCESS GENERATES SIGNIFICANT VOLUMES OF WASTE WATER IN GEOGRAPHICAL AREAS WHERE WATER CAN BE SCARCE.
OUR HISTORICAL FARM IS FULLY INTEGRATED WITH THE JUNGLE HABITAT, WITH MANY OF THE TREES BEING OVER A HUNDRED YEARS OLD, WHICH SUSTAINS A WIDE DIVERSITY OF WILDLIFE INCLUDING SEVERAL ENDANGERED SPECIES.
DUE TO THE FARMS INTEGRATION WITH THE JUNGLE AND HIGH ELEVATION, DONKEYS AND HAND PICKING ARE ESSENTIAL. ALL BEANS ARE PICKED CAREFULLY PICKED AT THE PEAK OF RIPNESS AND SUN DRIED WITH THE FRUIT FLESH ON, WHICH IS CALLED NATURAL OR HONEY PROCESSED. THIS RESULTS IN COFFEE THAT IS OF SUBSTANTIALLY HIGHER QUALITY, WINNING SEVERAL AWARDS FOR THEIR QUALITY COFFEE BEANS.
THE BEAN
OUR COFFEE BEANS ARE HARVESTED AND DRIED IN A VERY DIFFERENT MANNER THAN MOST ON THE MARKET TODAY PLACING THEM IN A SPECIALTY CATEGORY RATING THE HIGHEST POSSIBLE CUPPING SCORES BEANS CAN ACHIEVE. THE PROCESSES REQUIRE MORE WORK AND MORE TIME, BUT THEY ARE WELL WORTH IT.
THE COFFEE FRUIT, CALLED 'GRAPES' ARE PICKED ONCE FULLY RED. SOMETIMES A PARTICULAR FIELD WILL BE PICKED UP TO 10 TIMES JUST TO ENSURE ONLY THE REDS ARE TAKEN. ONCE PICKED THESE 'WET SACKS' ARE SPILLED OUT ONTO LARGE CLOTHS IN THE SUN TO DRY AND 'COOK'. WHAT THIS MEANS IS AT DIFFERENT TIMES OF THE DAY THE GRAPES ARE WRAPPED UP AND SEALED TO BAKE IN THE HEAT AND AT OTHER TIMES THEY ARE SPREAD OUT ON THE SHEET TO AIR DRY IN THE SUN. THIS PROCESS IS REPEATED MULTIPLE TIMES A DAY OVER A PERIOD OF MANY WEEKS AND REQUIRES CONSTANT ATTENTION. THIS LONG PROCESS ALLOWS THE FRUIT FLESH NATURAL SWEET HONEYS TO SOAK INTO THE INNER BEANS AND RESULTS IN THE TOP RANKING COFFEES IN THE WORLD. IN FACT WASHED INDUSTRIAL COFFEE NEVER RANKS IN TOP CATEGORIES, ONLY HONEY DRIED. ONCE DRIED TO A SPECIFIC HUMIDITY THE GRAPES ARE THEN MILLED. NO WATER IS EVER USED IN THIS PROCESS.

IT ALL STARTED FROM A SIMPLE DESIRE TO HAVE A DAMN GOOD CUP OF COFFEE! TIRED OF THE TRADITIONAL "INDUSTRIAL ROASTED" COFFEE THAT PLAGUED THE MARKET, OCCUPYING EVERY GROCERY STORE, GAS STATION AND COFFEE SHOP. IT WAS WHEN I BEGAN TO TRAVEL OUTSIDE OF CANADA TO DIFFERENT COFFEE PRODUCING COUNTRIES WHERE I REALIZED THE STARK DIFFERENCE BETWEEN THE INDUSTRIAL SWILL BEING SLUNG IN EVERY CORNER OF CANADA. THIS SPARKED MY PASSION FOR HIGH QUALITY COFFEE AND THE DESIRE TO BRING THIS EXPERIENCE BACK TO CANADA. AFTER YEARS OF LEARNING, EXPERIMENTING, AND SOURCING THE BEST BEANS, RIP COFFEE CO. WAS BORN.
